Potato pancakes are very popular in Slavic community, in terms of breakfast. It's a combination of a very few simple ingredients such as potatoes, onion, eggs, seasoning and, on some occasions, even flour. Crunchy edges of the potato pancakes were my favorite, during childhood. I often asked mom to fry my piece for a longer time to make it extra crispy.

Roulade is especially a great appetizer to have during holidays and parties. It's made beforehand and served cold over the next several days.

It is also one of my favorite snacks to have around the house. Often, I have moments when I open a fridge, grab a snack and go; and it helps to have these roulades, sliced and ready to grab.

I love this amazing weather in TN, today was 90 outside and I been grilling corn 2 days in row. This goes so well with BBQ my dad in law made.

As child I always loved corn. After I got married I realized how much work it is to prepare corn so only had patients for few times. I seen lots of different recipes where you dont have to cook corn for hours but cant compare the taste.
