Zucchini Bake  Recipe

I have tried so many recipes with zucchini this year. Some have been disappointment and some I am in love with. This one is one of my favorites and huge plus it’s healthy. My mama shared this simple dish with me, she has zucchini growing quick in her garden and that’s how she uses them. You can serve it hot or cold.
I expected for the zucchini to taste really greasy because when you fry zucchini with oil it tends to absorb it. Because frying pan was hot and I used spay oil it wasn’t at all.

Serving size:
    • 3
    • small Zucchini
    • 1
    • large Onion; diced
    • 4
    • medium Carrots; grated
    • 6
    • Garlic Clove; peeled
    • Salt; to taste
    • Spray Oil
    • Cooking Oil

Cut zucchini in thin slices. Preheat frying pan, spray with cooking oil and brown each a bit.
While frying zucchini, sprinkle salt to taste. I would not sprinkle too much because a lot of the flavor will come from ketchup.
In another frying pan sauté onions and carrots, until golden brown. Add ketchup, cook for another minute.
Place zucchini in ceramic dish, add garlic cloves and top sautéed ingredients. Bake at 400F for 30 minutes.
