When zucchini is in season, I tend to always have some in the fridge. This is a very simple way to prepare zucchini, creating a very delightful taste.
With a few of my own adjustments to the original recipe that came from a friend that I met trough blogging, this makes a perfect side dish for a dinner.

- Preheat the oven to 400F. Wash zucchini, remove ends and cut it in half lengthwise. Slice garlic cloves into thin pieces.
- Using a knife, create crisscross patterns on each slice, season with garlic parsley salt. Place zucchini on a lined baking sheet.
- Drizzle slices with olive oil and squeezed lemon juice. Sprinkle with some parmesan cheese and garlic pieces.
- Bake for about 25 minutes, or until zucchini is soft. Serve warm.
