I am having a very lazy first week of boys back to school. Besides making Zuppa Toscana and few other easy things, we have mostly been eating nachos. Boys call them chips pizza, they call everything with melted cheese a pizza.
You get to control the amount and type of ingredients you add to nachos. You can easily add cooked Mexican rice, other varieties of beans, jalapeños, different cheese types and more veggies.
Nachos would make a great appetizer for game nights or movie nights. I think we will be doing a lot of movie nights with Washington states’s rainy weather approaching.

- Cheddar Jack Cheese
- Cooked Corn
- canned Pinto Beans
- Fresh Tomato
- Prepare the ingredients you would need. Dice fresh veggies into tiny cubes, create different plates for different taste buds.
- In an over friendly dish, place chips. Top chips with cheese, beans and corn. Follow by another layer of the same stuff.
- Place nachos in the oven on a Low Broil for about 10 minutes or until all cheese is melted, time may depend on your dish. Top nachos with fresh veggies and serve right away, enjoy while cheese is all melted.
