Baked Cod with Vegetables Recipe

This baked cod recipe is made with your favorite store-bought roasted garlic pasta sauce and is packed with a ton of fresh veggies. Healthy yet decadent!

INGREDIENTS

– cod fillets – small carrots – large onion – celery – large bell pepper – Roasted garlic pasta sauce – salt & pepper – ground black pepper – oil avocado or olive

STEP 1

Dice all the veggies into small pieces.

In a large skillet, sauté the vegetables with a bit of olive oil.

STEP 2

Add the roasted garlic pasta sauce to the vegetables and stir to combine.

STEP 3

Place the cod fillets on the bottom of a baking dish. Season the tops with salt and pepper. Pour the veggie sauce on over the top of the fish.

STEP 4

Cover it with a lid or foil. Bake at 350°F for 40 minutes. Serve warm or cold and enjoy!
