This recipe for ground Beef quesadillas only takes 30 mins to prepare and is ridiculously kid-friendly. Super savory and best paired with sour cream for dipping!
– 1 lb Ground Beef – 1 medium onion – 1 tsp salt adjust to taste – 1 tbsp taco seasoning – 2 tbsp tomato paste – 8 oz Mexican cheese shredded – 6 large flour tortillas – 4 tbsp oil avocado or olive oil
Preheat a large heavy bottomed skillet. Add in the Ground Beef and brown it, breaking it apart into smaller pieces as you go.
Season the Beef with salt and taco seasoning. Next, add in the onion and sauté it until it's translucent.
Stir in the tomato paste and cook the mixture for a minute longer. Remove the skillet from heat.
Preheat a separate pan with a bit of oil. Place a tortilla in the pan and sprinkle half of it with cheese, followed by a spoonful of the ground Beef and a bit more cheese.
Fold the tortilla over and cook it on both sides until the cheese is melted and the quesadillas are golden brown. Serve and enjoy!
