Streusel Blueberry Coffee Cake  (Easy Recipe)

This easy blueberry coffee cake is packed full of plump, juicy blueberries and topped with a buttery, brown sugar streusel. Yum!

Ingredients

– unsalted butter –  sugar – vanilla extract – egg – flour – baking powder – milk – blueberries – brown sugar

On the largest setting of a cheese grater, shred frozen/ultra-cold butter into bowl with flour.

STEP 1

Add brown sugar to the mixture. Stir to combine and set aside for later.

STEP 2

Preheat oven to 350°F. In a large bowl, add butter and sugar, beating until well combined and fluffy.

STEP 3

Add vanilla extract and egg. Beat until smooth.

STEP 4

In a separate, small bowl, combine flour with baking powder.

STEP 5

Into the sugar/butter mixture, add in flour/baking powder mixture in small parts, alternating with a small splash of milk.

STEP 6

Stir in blue berries. Grease a 6-inch baking pan with butter. Spread the cake mixture evenly though out the pan.

STEP 7

Spread the streusel topping over the top of the cake batter. Bake cake for 50-60 minutes.
