Meatball Kale Soup Recipe

Everyone needs an easy Meatball Kale Soup recipe in their back pocket. This particular recipe is perfect for a hectic weeknight when you want a homecooked meal with little fuss.

INGREDIENTS

– ground turkey – egg garlic parley salt oil – medium onion – medium carrot – medium potatoes – fresh kale – water or chicken/beef broth – salt – pepper

STEP 1

Preheat oiled pot over medium-heat with olive oil. Sautee onions and carrots until they soften and the onions turn translucent.

STEP 2

Add water or broth to the the pot. Bring to a simmer.

STEP 3

Form meatballs by rolling the meat mixture into a ball in the palm of your hand. Add one at a time to the boiling water. Let soup simmer for 15 minutes.

STEP 4

Add diced potatoes to the simmering ingredients. Once they are fully cooked (about 15 minutes), add in the kale strips.

STEP 5

Season to taste with salt and pepper. Serve soup while it is warm.
