The Classic Mushroom Cookies Recipe

Mushroom cookies are one of the most classic Slavic sweets. Stuffed with rich dulce de leche filling and endlessly customizable, you’ll soon be addicted!

  • Combine the flour and sugar together.
  • Rub the butter and margarine into the flour and sugar until the mixture looks like fine bread crumbs.
  • Make a well in the middle of the flour. Place the mayonnaise, eggs, and baking powder in the well. Incorporate the wet ingredients into the dry ingredients by hand (or place the ingredients in the bowl of an electric mixer instead).
  • Using an oreshnitsa maker, place small pieces of dough inside each metal form. Close the mold and cook the cookies until golden brown.
  • Remove the excess dough off the sides of the mold.
  • Break the excess pieces of dough into crumbs.
  • To make the filling, beat the butter with the dulce de leche. Next, add in the cookie crumbs and stir to combine.
  • Fill each side of the cookie molds with the creamy filling and press the two cookies together to form a whole mushroom. Enjoy!
