Using a blender, combine the eggs and cottage cheese.
Pour the egg mixture into the mold, leaving about a 1/4-inch space at the top. Sprinkle veggies, meats, and/or herbs into the egg bites. Cover the mold tightly using a lid or foil.
Fill the instant Pot with half a cup of water and place the mold on the trivet. Secure the lid of the Instant Pot and flip it to the sealed position. Set the timer to 10 minutes and turn on the steam setting. Allow the Instant Pot to do a natural release.
Flip on on the venting position to remove any remaining pressure in the Instant Pot. Once the pressure pin drops, safely remove mold. Take the egg bites out of the mold and enjoy!
