This chicken lentil soup is full of fiber from the lentils & protein from the chicken. It will keep you full for hours while also warming up your entire soul!
Preheat a heavy pot with oil. Add the chopped onions and carrots and sauté them until they soften and the onions turn translucent.
Add in the chicken, lentils, bay leaves, cumin, salt, and pepper.
Add in the water and bring it to a boil. Drop the heat down low and simmer the soup for 40 minutes (note: you may need to add more water during the simmering process depending on how thick you like your soup).
