2 cups cooked quinoa 1 cup pomegranate seeds 2 cups cherry tomatoes sliced 1 cup cucumber sliced 2 cups kale chopped 1 lemon juiced 1/2 tsp black pepper 2 tbsp avocado oil 1/2 tsp salt adjust to taste In a small dish, combine lemon juice, oil, salt and pepper to create your dressing. Whisk to combine and set aside.
Place quinoa, chopped kale, cucumber, tomatoes and pomegranate seeds in a large mixing bowl.
Right before serving, drizzle the dressing all over the salad. Serve right away and enjoy!
