Peel the skin off the mango with a potato peeler and cut the flesh it into small cubes.
Place the mango into a blender with lemon juice and sugar.
Blend the fruit until it's pureed.
Place a couple of tablespoons of the mango puree into a glass. Top with a couple of mint leaves and fill the glass to the top with club soda. Optionally, add in some ice. Sit back and enjoy!
