Ingredients

  • 3 large bananas ripe
  • 3 eggs
  • 1 1/2 cup oats quick or steel cut

Instructions

  • Mash bananas in a medium-sized bowl until there are no lumps.

  • In a separate bowl, whisk the eggs until smooth. Add them to the mashed bananas. Stir to combine.

  • Toss the oats into a blender and blend on high for 30 seconds or until you get a flour-like texture.

  • Add the ground oats to the mashed banana mixture. Stir to combine.

  • Preheat a large skillet with a bit of butter. Brown each pancake on each side until golden brown (about 1-2 minutes). Serve with your favorite toppings and enjoy!
