- 7 oz arugula
- 1 1/2 cups cooked farro
- 1 cup feta
- 1 large apple sliced
- 1/3 cup cranberries
Start by placing the arugula on the bottom of a large bowl. Top it off with the cooked farro.
Add on the apple slices, feta cheese, and cranberries.
In a small jar with a lid, combine the oil, dijon mustard, lemon juice, salt, and pepper. Seal the lid and shake to combine.
Drizzle the dressing all over the salad. Serve and enjoy.
