Preheat a skillet with oil over medium heat. Add in the diced bell pepper and onion and sauté them for 5 minutes or until veggies soften.
Add the shrimp and taco seasoning. Cook until the shrimp begins to turn pink. Transfer everything to a bowl and set it aside.
Preheat a pan with a bit of butter. On half of the tortilla, add the cheese, shrimp mixture, and more cheese. Fold the tortilla over.
Once the tortilla is golden, flip it over and cook for a few more minutes until the other side is also golden. Repeat the same steps with the rest of quesadillas. Enjoy!
