Clean and slice strawberries into bite sized pieces. Place them in a bowl with the remaining filling ingredients. Stir to combine, set aside.
Cobbler Topping
In a medium size bowl mix all of the dry ingredients.
Grate or cut butter into the dry ingredients. Combine until the mixture is crumbly.
In a separate dish, combine buttermilk with the vanilla extract. Pour the buttermilk mixture into the dry ingredients. Stir to combine everything together.
Place strawberry filling on the bottom of a 9 inch pan.
Place 6-8 spoonfuls of dough on top. Sprinkle with sugar.
Bake at 375°F for 35-40 minutes or until the top is golden brown. Serve immediately with your favorite ice cream.
