Ingredients

  • 16 oz Corn
  • 16 oz Red Bell Peppers
  • 1/2 Purple Onion
  • 1 lb Cheddar Cheese
  • 9 oz Chili Fritos
  • 1/2 cup Mayonnaise

Instructions

  • Prepare ingredients for the salad. I used frozen corn and kept it in hot boiling water for about 10 minutes.
    Ingredients on the table including; half a purple onion, corn in a bowl, mayo in a jar, Fritos chili cheese chips, cheddar cheese and red peppers
  • Dice bell peppers and onion into small pieces. Grate cheese on the larger side of the grater. Break up fritos a little, it's up to you the size you want to keep it in.
    2 bowls one with diced purple onions and one with diced red peppers
  • If you plan to serve the salad later, lay it out in this order - corn, belle peppers, onion, cheese and fritos. Add mayonnaise right before serving the salad.
