In a separate bowl, combine flour, salt, baking powder and set aside.
In a large bowl, whisk together egg and sugar until light and fluffy.
Fold in bananas to the egg mixture. Add vanilla and oil, then stir to combine together.
In small parts, fold in dry ingredients until fully incorporated. Follow by adding chocolate chips.
Line muffin pan with liners or spray each one with oil. Fill with the muffin batter. Bake at 375° for about 20-25 minutes or until the toothpick comes out clean.
Let them rest for 5 minutes before serving. Enjoy!
