Ingredients

  • 8 large eggs hard boiled
  • 4 tbsp mayonnaise
  • 1 tbsp yellow mustard
  • 1/2 tbsp salt adjust to taste
  • 1 tsp ground black pepper adjust to taste
  • 8 slices of bread
  • 8 lettuce leaves

Instructions

  • Peel and mash eggs in a bowl. Season with mayonnaise, mustard, salt, and pepper. Stir to combine everything together.

  • To assemble sandwiches, place a few lettuce leaves on a slice of bread. Top it off with egg salad, then another slice of bread and enjoy!
