- 8 large eggs hard boiled
- 4 tbsp mayonnaise
- 1 tbsp yellow mustard
- 1/2 tbsp salt adjust to taste
- 1 tsp ground black pepper adjust to taste
- 8 slices of bread
- 8 lettuce leaves
Peel and mash eggs in a bowl. Season with mayonnaise, mustard, salt, and pepper. Stir to combine everything together.
To assemble sandwiches, place a few lettuce leaves on a slice of bread. Top it off with egg salad, then another slice of bread and enjoy!
