Marry Me Chicken (Creamy Tuscan Chicken)

Ingredients

  • 3 lbs chicken breast
  • 1 tbsp garlic parsley salt
  • 1 tsp paprika
  • 2 tbsp oil olive or avocado
  • 3 tbsp unsalted butter
  • 1 cup cherry tomatoes halved
  • 1/2 cup sun-dried tomatoes in oil drained and diced
  • 3 garlic cloves minced
  • 3 cups heavy cream
  • 3 cups fresh spinach chopped
  • 1 cup parmesan cheese freshly grated

Instructions

  • Season the chicken breasts on both sides with garlic parsley salt and paprika.
    Seasoned chicken on a baking sheet.
  • Preheat a deep skillet with oil over medium-high heat. Cook the chicken on both sides until golden brown and cooked through. Remove and set aside.
    Browned chicken in a pan.
  • Add the butter to the same pan. Toss in the cherry tomatoes and sun dried tomatoes and cook on medium-low for a few minutes. Add the garlic and cook for a few more minutes.

  • Pour in the heavy cream and bring the sauce to a simmer. Stir in the spinach and cook until it wilts.

  • Melt in the Parmesan cheese, then add the chicken back into the skillet with the tomato cream sauce. Enjoy!
