This Tomato Basil Soup is so easy to prepare. It only borrows 10 minutes of your effort and the rest is up to your oven.

Ingredients

  • 10 medium Tomatoes
  • 2 large Red Bell Pepper
  • 2 Yellow Onions
  • 1 head of Garlic
  • 1 cup Fresh Basil
  • 1 tbsp Oil (Olive, Canola or Grape Seed)
  • Salt and Pepper to taste

Instructions

  • Prepare the ingredients for the recipe.
    Ingredients on the table including; red bell peppers, tomatoes, garlic cloves, onions, salt in a bowl, grapeseed oil, and basil
  • Cut all veggies and lay them flat on a baking sheet. I ended up using two baking sheets. Drizzle veggies with oil.

  • Roast at 400F for about 40 minutes or until golden brown. Add in basil to the roasted veggies.

  • Puree the soup using a blender. Season with salt and pepper to taste.
