Blend the freeze-dried raspberries until they're finally crushed, then add them into the melted chocolate. Use a cookie scoop to portion out the truffle batter. Next, use your hands to shape the batter into a ball shape about the size of a walnut.
Melt the chocolate chips until smooth. Dip each truffle into the melted chocolate and sprinkle it with crushed raspberries on top.
