Bruschetta Sandwich

Classic bruschetta is the perfect appetizer during those hot summer months. It’s best served on top of toasted garlic bread slices and eaten fresh!

Ingredients

  • 1 baguette
  • 2 cups cherry tomatoes diced
  • 1 cup fresh mozzarella diced
  • 4 tbsp fresh basil chopped
  • 2 garlic cloves
  • 1 tbsp olive oil
  • 1 tbsp balsamic glaze
  • 1/2 tsp pepper adjust to taste
  • 1 tsp salt adjust to taste

Instructions

  • Preheat the oven on the broiler setting. Slice a baguette into 1.5 inch slices. Place slices of bread on baking sheet, spray with olive oil and sprinkle with some sea salt. Broil each side for about 3 minutes (or until golden), flip to the other side and do the same.

  • Remove bread from oven, rub each side with garlic.

  • Combine the veggies, cheese, oil, and basil together, then season with some salt and pepper. Toss all together.

  • Top each bread piece with a mixture of veggies. Drizzle with balsamic glaze. Serve right away while still fresh.
