  • Prepare all ingredients.
    Ingredients on the table for egg & sprats canapes; sprats fish, baguette, pickles in a bowl, mayo, 5 eggs and salt and pepper
  • Grate broiled eggs. Combine eggs with mayonnaise, salt and pepper. Season to taste, making sure your egg salad isn't too salty since the sprats carry a lot of sodium.

  • Spread about one tablespoon of the egg mixture onto each slice of bread.
