Healthy Zucchini Fritters
These zucchini fritters are unbelievably easy to make and a fun way to sneak veggies into your diet. Fried until golden brown, they are best served with a generous dollop of sour cream and fresh herbs.

2 cup zucchini grated, and squeezed to drain 1/2 cup whole wheat flour 2 eggs 1 tsp salt 3 tbsp oil for cooking
Combine zucchini together with flour, eggs, and salt in a bowl.
Preheat oil in a skillet. Spoon small amounts of mixture into the pan.
Fry on each side until golden brown.
