Braised Oxtail is a delicious one-pot meal. This dish takes some time to cook, but the fall off the bone end results are well worth the wait.

- 1 tbsp oil
- 3 lb oxtail
- 1 lb baby potatoes
- 3 medium carrots
- 1 medium onion
- 2 tbsp salt
- 1 tsp pepper
- 3 bay leaves
- 4 cups water
Preheat oven to 350 °F. Chop carrots, onion and potatoes to bite-sized pieces. Set aside.
Preheat a dutch oven with oil on high heat. Brown oxtail on all sides until it's golden brown.
Season the beef generously with salt and pepper. Add veggies and bay leaves to the pot.
Add water and stir to combine all ingredients together.
Cover with a lid and leave it to bake for at least 2 hours. Oxtails will fall off the bone when they are fully cooked.
