Ingredients

  • 3 medium potatoes chopped
  • 1/2 small cabbage head shredded
  • 1 lb bone-in meat pork or beef
  • 2 tbsp Beef Better Than Bullion Beef Base
  • 2 tbsp oil avocado or olive
  • 1 small onion chopped
  • 1 large carrot grated
  • 10 oz can diced tomatoes
  • 1 tbsp salt adjust to taste

Instructions

  • Peel and chop the potatoes into small pieces. Shred the cabbage.

  • Rinse the meat under cold water. In a large soup pot, bring 4 quarts of water to boil. Add the meat and Better Than Bouillon Beef Base and cook for 30 minutes.

  • Add the potatoes and cabbage, simmer for 10 minutes.

  • Chop the onion, and grate the carrot. In a skillet over medium heat, sauté the chopped onions with a little bit of oil until golden brown. Add the shredded carrot and cook for another 5 minutes. Add the can of diced tomatoes and cook for another 5 minutes.

  • Remove the meat pieces from the soup. Add the meat back into the soup, discard of the bone.

  • Season to taste with salt. Serve immediately and enjoy!
