  • 3 lb whole chicken (whole or cut the chicken into pieces)
  • 1 lb potatoes
  • 4 large carrots
  • 1 large yellow onion
  • 1 tbsp parsley garlic salt adjust to taste
  • 1 tbsp olive oil for seasoning


  • Cut all vegetables into medium size pieces. If you are using larger potatoes, I would suggest cutting them.

  • In a large bowl season chicken with parsley garlic salt.

  • Add carrots, potatoes, onions, and drizzle with oil. Toss everything together to ensure that the seasoning is evenly mixed in.

  • Spread vegetables and chicken on a baking sheet.
