In saucepan, combine the water, granulated sugar, and strawberries. Simmer on medium-high heat for about 5-6 minutes, or until the liquid gets syrupy and the strawberries begin to breakdown.
Using a stand mixer, whip the heavy whipping cream, blueberries, and powdered sugar until soft peaks form (about 3-5 minutes).
To assemble the sundaes, spoon the warm strawberry compote into the bottom of the bowl or glass. Top with 1/2 cup of vanilla ice cream.
Add a dollop of the blueberry whipped cream and sprinkle on the crushed pretzels. Serve immediately and enjoy!
