  • Combine ricotta cheese, milk, eggs, vanilla extract and sugar. Stir until well combined.
    Ricotta and other liquid ingredients in a bowl.
  • In a separate bowl combine flour with baking powder. Add flour mixture to the ricotta mixture, and mix just until combined.
    Dry ingredients in a bowl.
  • Lightly coat a skillet with oil and preheat over medium heat. Pour about 1/4 cup of batter into the hot skillet. Fry pancakes until bubbles appear on top and both sides are golden brown, flipping once.

  • Serve with your favorite toppings while they are still hot.
