Preheat the oven to 400°F. Cook orzo according to package instructions, but cut off the heat two minutes early to prevent it from over cooking. Drain and set aside. Cut bell peppers in half vertically, through the middle of the stem. Remove the seeds and set aside.
Preheat a tablespoon of oil in a medium pan. Add chopped onion and cook until translucent.
Add beef and cook while breaking it apart.
Stir in pasta sauce, orzo, and shredded mozzarella and Parmesan. Season with salt and pepper — you may need to adjust to your liking.
Fill each half of the bell pepper with the beef orzo mixture. Top them off with fresh mozzarella.
Place the peppers in a baking dish, leaving a bit of space between each one. Cover with an oven-safe lid or foil. Bake at 400°F for about 30 minutes. Enjoy!
