Italian Stuffed Peppers

These bell peppers are loaded with creamy orzo, pasta sauce, and ground beef, then topped with melty cheese for the perfect weeknight dinner. Let's get to stuffing!

Ingredients

  • 1/2 cup orzo
  • 3 large bell peppers
  • 1 tbsp oil olive or avocado
  • 1 large onion chopped
  • 1 lb ground beef 85% lean
  • 14 oz pasta sauce
  • 1 cup Mozarella cheese shredded
  • 1 cup Parmesan cheese shredded
  • 1 tsp ground black pepper adjust to taste
  • 1 tsp salt adjust to taste
  • 6 oz fresh Mozzarella cheese sliced

Instructions

  • Preheat the oven to 400°F. Cook orzo according to package instructions, but cut off the heat two minutes early to prevent it from over cooking. Drain and set aside. Cut bell peppers in half vertically, through the middle of the stem. Remove the seeds and set aside.

  • Preheat a tablespoon of oil in a medium pan. Add chopped onion and cook until translucent.

  • Add beef and cook while breaking it apart.

  • Stir in pasta sauce, orzo, and shredded mozzarella and Parmesan. Season with salt and pepper — you may need to adjust to your liking.

  • Fill each half of the bell pepper with the beef orzo mixture. Top them off with fresh mozzarella.

  • Place the peppers in a baking dish, leaving a bit of space between each one. Cover with an oven-safe lid or foil. Bake at 400°F for about 30 minutes. Enjoy!
