Ingredients

  • 3 cups leftover mashed potatoes
  • 2 large eggs
  • 1 1/2 cups cheddar cheese grated
  • 1/2 cup all purpose flour
  • 1/2 cup oil for frying

Instructions

  • In a large bowl, mix the mashed potatoes with eggs until well combined.
    All the ingredients for mashed potato pancakes in a bowl.
  • Add in the cheese and flour. Stir the mixture together until perfectly smooth.

  • Divide the mixture into 18 equal parts. Shape each part into a flat pancake shape. Preheat a pan with oil over medium heat. Cook pancakes until golden brown and crispy (about 3 minutes).
