Preheat the oven to 450°F. In a large bowl, combine the dry ingredients.
Using the large side of the grater, grate the frozen butter into the dry ingredients.
Add the grated cheese and the cold buttermilk. Use a spatula to stir together the ingredients, working quickly but gently.
Scoop the dough onto a floured surface. Fold the dough over itself a few times to form a cohesive ball. It should be crumbly and flaky. Roll out the dough to a 1 1/2 inch thickness. Cut out 3 inch sized biscuits using a biscuit cutter.
