2 tbsp oil olive or avocado 1 medium onion diced 1/2 lb sausage or cooked ham, diced 1/2 lb shrimp peeled and deveined 1 cup frozen sweet peas thawed 5 cups cooked white rice day old 3 tbsp soy sauce low sodium 1/3 cup green onions 3 large eggs beaten 1 tsp salt adjust to taste Preheat a wok with 1 tbsp oil. Add in the onion and cook until it's softened and translucent.
Add sausage and cook for about three minutes or until heated through.
Add shrimp and cook until it starts turning pink. Mix in green peas and toss together for about 2 minutes. Remove from the pan and set aside.
In the same wok, preheat 1 tbsp of oil on high. Add in the cold rice and spread it evenly on the bottom of the pan. Cook for a few minutes.
Add the shrimp mixture, soy sauce, and green onions to the rice, and toss them together.
Spread the mixture creating an open center area of the wok. Add the beaten eggs and as they cook, break them lightly with a spatula into pieces.
Season to taste and enjoy!
