  • Preheat the oven to 350°F. Line a muffin pan with paper liners.

  • In a large bowl, mash the bananas. Whisk in the eggs, buttermilk, and vanilla extract until combined.

  • In a separate bowl, combine the whole wheat flour, all-purpose flour, rolled oats, sugar, baking powder, and baking soda.

  • Gradually fold the dry ingredients into the wet ingredients until just combined. Do not overmix.

  • Gently fold in the blueberries. Fill each muffin cup about ¾ full. Sprinkle the tops with coarse sugar if desired.

  • Bake the muffins for 20–30 minutes, or until a toothpick inserted into the center comes out clean. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy!
