12 eggs ½ teaspoon salt 1 cup full-fat cottage cheese ¾ cup Parmesan cheese shredded 4 cups fresh spinach roughly chopped Preheat the oven to 375°F. Lightly spray a 9×13-inch baking dish with nonstick cooking spray.
In a large bowl, whisk together the eggs and salt until smooth.
Stir the cottage cheese, shredded Parmesan, and chopped spinach into the egg mixture until evenly combined.
Pour the mixture into the prepared dish and bake for 35–40 minutes, or until the center is fully set.
Allow the egg bake to cool slightly before slicing and serving. Enjoy!
