Ingredients

  • 12 eggs
  • ½ teaspoon salt
  • 1 cup full-fat cottage cheese
  • ¾ cup Parmesan cheese shredded
  • 4 cups fresh spinach roughly chopped

Instructions

  • Preheat the oven to 375°F. Lightly spray a 9×13-inch baking dish with nonstick cooking spray.

  • In a large bowl, whisk together the eggs and salt until smooth.
