Ingredients
2lbsboneless, skinless chicken breastscut into bite-sized pieces
In a large bowl, whisk together the olive oil, garlic, Parmesan, lemon juice, Italian herbs, and salt.
Add the chicken pieces and toss until they are fully coated. Cover and marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
Thread the chicken onto skewers.
Preheat the grill to medium heat. Grill the skewers for 15–20 minutes, turning occasionally, until the chicken is golden and cooked through (the internal temperature should reach 165°F).
Remove the skewers from the grill and sprinkle extra Parmesan and fresh herbs on top while they are warm. Enjoy!
