Garlic Parmesan Chicken Skewers

Ingredients

  • 2 lbs boneless, skinless chicken breasts cut into bite-sized pieces
  • 1/2 cup olive oil
  • 6 cloves garlic freshly minced
  • 2/3 cup freshly grated Parmesan cheese
  • 2 tbsp fresh lemon juice
  • 2 tsp dried Italian herbs
  • 1 tsp salt or to taste

Instructions

  • In a large bowl, whisk together the olive oil, garlic, Parmesan, lemon juice, Italian herbs, and salt.

  • Add the chicken pieces and toss until they are fully coated. Cover and marinate for at least 30 minutes, or up to 4 hours in the refrigerator.

  • Thread the chicken onto skewers.

  • Preheat the grill to medium heat. Grill the skewers for 15–20 minutes, turning occasionally, until the chicken is golden and cooked through (the internal temperature should reach 165°F).

  • Remove the skewers from the grill and sprinkle extra Parmesan and fresh herbs on top while they are warm. Enjoy!
