Preheat the grill to medium heat. Lightly brush the cut side of the peaches with olive oil. This helps prevent sticking and gives you beautiful grill marks.
Place the peaches cut-side down on the grill. Cook them for about 3–4 minutes, until the bottoms are nicely charred.
Flip the peaches and cook them for another 2–3 minutes, just until they have softened but are still holding their shape.
Remove the peaches from the grill and place 2 halves on each plate. Add a scoop of vanilla ice cream.
Drizzle the peaches and ice cream with honey, and optionally add the fresh mint. Serve right away while everything is warm and melty. Enjoy!
