Grilled Peaches with Ice Cream

Ingredients

  • 4 ripe peaches halved and pitted
  • 2 tbsp olive oil
  • 4 scoops vanilla ice cream
  • 2 tbsp honey
  • fresh mint optional

Instructions

  • Preheat the grill to medium heat. Lightly brush the cut side of the peaches with olive oil. This helps prevent sticking and gives you beautiful grill marks.

  • Place the peaches cut-side down on the grill. Cook them for about 3–4 minutes, until the bottoms are nicely charred.

  • Flip the peaches and cook them for another 2–3 minutes, just until they have softened but are still holding their shape.

  • Remove the peaches from the grill and place 2 halves on each plate. Add a scoop of vanilla ice cream.

  • Drizzle the peaches and ice cream with honey, and optionally add the fresh mint. Serve right away while everything is warm and melty. Enjoy!
