  • Preheat a pizzelle iron. Combine eggs and sugar in a large mixing bowl. Whisk until the eggs are light and have doubled in volume.

  • Add in melted butter and vanilla extract, and mix until combined.

  • In a separate bowl, combine flour and baking powder. Fold in dry ingredients to the egg mixture.
