Russian Pryaniki Recipe

Pryaniki to Russia are perhaps like doughnuts to US, they are one of the most common type of cookies you will find throughout the country. They are soft on the inside, with a sweet glaze all around. Most often they're served with tea or coffee.

  • Whisk egg yolks into sugar until well combined.

  • Into the sugar mixture, add sour cream, mayonnaise and honey, whisk until well combined.

  • In a separate bowl, combine together flour and baking powder.

  • In small portions, add flour into the liquid mixture. Dough may be very sticky, but it's normal. Refrigerate the dough for about two hours.

  • Using a spoon, spoon out small pieces of the dough. Using your hands, shape each piece into a circle. You need to wet your hands, because this dough is very sticky.

  • Bake cookies at 350 for about 15 minutes or until golden brown. Remove cookies from the oven and cool to a room temperature.

  • Using a stand up mixer, beat egg whites with powdered sugar, until you receive glaze like mixture.

  • Using a pastry brush, glaze tops of the cookies and let them rest until completely dry. Turn cookies over and apply the same glaze to the bottoms.
