- 2 lbs salmon 4-5 salmon filets
- 2 tsp garlic parsley salt
- 2 tbsp olive oil or unsalted butter
- 8 oz baby bella mushrooms sliced
- 2 garlic cloves minced
- 2 cups heavy cream
- 1/2 cup Parmesan cheese grated
- 4 oz baby spinach fresh
- 1/2 tsp salt adjust to preference
Pat the salmon dry and slice it into 4-5 equal filets. Season with garlic parsley salt.
Add the olive oil to a large skillet and heat it over medium-high heat. Sear 3-6 minutes on each side. Transfer the cooked salmon to a separate plate.
In the same skillet, add the mushrooms (adding more olive oil or butter if needed). Cook until they are soft and brown.
Add the minced garlic and cook until fragrant.
Pour in the heavy cream, add the cheese, and cook until the sauce slightly thickens.
Add the spinach and cook just until it wilts, about 3 minutes. Season with salt to taste.
Place the salmon filets back into the sauce and top the salmon with the sauce. Serve warm and enjoy!
