4 medium tomatoes 8 large radishes 2 large avocados 1 English cucumber 1 red onion 2 tbsp fresh parsley chopped 2 tbsp olive oil 1 tbsp lemon juice 1/2 tbsp salt to taste 1 tbsp pepper In a small bowl, combine together the oil, lemon juice, salt, and pepper. Whisk together and set aside.
Cut the tomatoes, radishes, avocados, and cucumbers into half-ring bite-size pieces. Place all the ingredients into a bowl.
Cut the onion into very thin quarter ring pieces and add to the rest of the vegetables. Drizzle the dressing over the vegetables.
Toss everything together and garnish with parsley. Serve immediately.
