Ingredients

  • 4 medium tomatoes
  • 8 large radishes
  • 2 large avocados
  • 1 English cucumber
  • 1 red onion
  • 2 tbsp fresh parsley chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tbsp salt to taste
  • 1 tbsp pepper

Instructions

  • In a small bowl, combine together the oil, lemon juice, salt, and pepper. Whisk together and set aside.
    Avocado salad dressing in the making, jar, lemon and salt, pepper
  • Cut the tomatoes, radishes, avocados, and cucumbers into half-ring bite-size pieces. Place all the ingredients into a bowl.

  • Cut the onion into very thin quarter ring pieces and add to the rest of the vegetables. Drizzle the dressing over the vegetables.
