Easy Baked Cod Recipe

Moist, tender baked cod can be prepared in under 30 minutes. You will love the juices of all the flavors combined in this dish. And as a huge bonus, baked cod reheats really well.

Ingredients

  • 2 lb cod fillet
  • 1 cup cherry tomatoes
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 1 small onion
  • 1/2 cup butter
  • garlic parsley salt to taste
  • parsley garnish
  • green onion garnish

Instructions

  • Prepare all ingredients ahead of time. Cut cod fillets into preferred serving size. Cut up onion and bell peppers in bite size.

  • Place all vegetables into one layer on a baking sheet. Add cod to the baking sheet. Season with garlic parsley seasoning salt or other seasoning that you love. Add chunks of butter to the top of cod.

  • Bake cod at 400°F for about 15 minutes. It'll be ready once its internal temperature reaches 145°F.
