Ground Beef Stuffed Peppers

These bell peppers are filled to the brim with ground beef, rice, and veggies, then baked to perfection in a creamy, tomato-ey sauce. You're sure to be stuffed after this mouthwatering meal!

  • Slice each bell pepper in half vertically, through the middle of the stem. Remove the stem and the seeds from the peppers. Dice the onion and shred the carrots.
    Cut open peppers in a pan.
  • Preheat a pan over medium heat with oil. Sauté the onion and carrots until golden brown.
    Cooked veggies in a frying pan.
  • In a large bowl, mix together rice, beef, salt, pepper, and sautéed veggies.

  • Stuff each halved pepper with the filling. Place the stuffed peppers into a baking dish.

  • In a separate bowl, combine tomato sauce, half & half and chicken broth.

  • Pour the tomato sauce mixture into the pan with the peppers. Cover the pan with a lid or foil. Bake at 400°F for about 45 minutes until the peppers are tender. Remove from the oven and enjoy!
