Blueberry Pancakes (Extra Fluffy)

  • In a medium bowl, mix together the flour, sugar, baking powder, and baking soda.
    Dry ingredients in a bowl.
  • In a separate large bowl, combine the buttermilk, eggs, and melted butter. Whisk to combine.
    Wet ingredients in a bowl.
  • Fold the dry ingredients into the buttermilk mixture. Add the fresh blueberries and gently fold them in.

  • Preheat a nonstick pan with a bit of butter on medium heat. Add 1/4-1/3 cup portions of batter to the pan and cook until bubbles appear in the center of the pancakes.

  • Flip the pancakes and cook until lightly golden. Serve right away with your favorite toppings and enjoy!
