Poppy Seed Roll (Classic Ukrainian)

Prepare the perfect yeast pastry dough according to the instructions. While the dough is rising, prepare the filling. Make the poppy seed filling according to the instructions. Allow it to cool to room temperature. Preheat the oven to 350°F. Divide the dough into four equal pieces.
Roll out each piece of dough into an even 11x8 inch rectangle. Spread the poppy seed mixture onto the dough.
Starting from the shorter side, roll the rectangle up like a jelly roll. Repeat the process with the other three pieces of dough.
Place the rolls seam side-down a few inches apart from each other on a baking sheet.
Lightly cover the baking sheet with plastic wrap and allow the rolls to rise for about an hour, or until they become puffy.
In a small bowl, whisk the egg and sugar together. Brush each roll with the egg wash.
Bake the rolls at 350°F for about 40 minutes or until they turn golden brown. Enjoy!
