Combine the flour, salt, pepper, and Italian seasoning in a large, shallow plate.
In a separate small bowl, whisk the eggs together and set aside.
In another bowl, combine the bread crumbs with the Parmesan cheese.
Cut zucchini into 1/4-inch thick slices. Dip each round into the flour mixture, followed by the egg mixture, then the breadcrumb mixture.
Coat the air fryer basket with cooking spray and place the zucchini in the basket in a single layer. Spray the zucchini chip tops with a light coat of cooking spray.
Air fry at 400°F for 5 minutes. Turn the zucchini over and air fry for an additional 5 minutes, or until they are golden brown.
