Soft scrambled eggs, melty cheese, and crispy bacon are the stars in this bacon egg and cheese burrito. I make over 500 of these a year... need I say more?
Preheat a large nonstick pan over medium high heat. Place a tortilla on the hot skillet and cook until both sides are golden, then transfer it to a plate. Repeat until all the tortillas are cooked.
In a medium bowl, combine the eggs, salt, and heavy whipping cream. Whisk until fluffy.
Using the same pan on medium heat, add the butter and eggs. Stir the eggs with a spatula, gently creating ribbons and scrambling them.
Now it's go time! Lay a tortilla flat, then add the scrambled eggs, cheese, and bacon in the center.
Fold over two opposite sides to enclose the filling, then roll the tortilla up tightly into a burrito. Repeat the process. Store the burritos in airtight containers until you're ready to enjoy them.
