You, my friend, are about to experience a recipe that has a permanent place in my heart. Set aside 30 minutes, do a bit of cooking and rolling, and get ready for bacon egg and cheese bliss.
- Cook the tortillas: Preheat a nonstick skillet over medium heat and cook the tortillas until they’re golden, flipping once.
- Scramble the eggs: Whisk together the eggs, salt, and heavy cream in a bowl. Melt the butter in the same pan you used to cook the tortillas, then add the egg mixture and stir gently with a spatula until scrambled.
- Assemble the burritos: Place a portion of the scrambled eggs, cheese, and cooked bacon in the center of a tortilla. Fold over the edges, then roll it up into a burrito. Repeat until you have six burritos.

This easy breakfast burrito recipe is quite straightforward, but I’ve still learned a few helpful tips while testing it. The overarching theme? Customize, customize, customize!
- Use uncooked tortillas. Not only do these taste more fresh, they’re easier to wrap because they’re thinner than pre-cooked tortillas. I buy a package of raw flour tortillas in the refrigerated section of Costco or Walmart — I love the brand Tortilla Land. Or, you can go above and beyond and actually make your own!
- Keep it simple. The point of this recipe is to make breakfast prep easier — so don’t stress about making everything from scratch. When I don’t have a batch of air fryer bacon on hand, I use pre-cooked bacon from Costco.
- Add your favorite fillings. If bacon, egg, and cheese isn’t tickling your fancy enough, take a tip from our breakfast burrito recipe and add mushrooms! Sautéed peppers, onions, avocado, and any of your favorite veggies also work. Feel free to swap the Mexican cheese for Gouda, Gruyère, American, Monterey jack, pepper jack, or cheddar cheese. You can even sub the bacon for a different type of meat, like breakfast sausage, if that’s more your preference.

I’m usually in a rush when I pull out a bacon egg and cheese burrito to munch on, so I keep the breakfast spread pretty simple. - 9 large eggs
- 1/2 tsp salt
- 1/3 cup heavy whipping cream
- 1 tbsp salted butter
- 1 cup Mexican cheese
- 1 cup cooked bacon chopped
Instructions
- Preheat a large nonstick pan over medium high heat. Place a tortilla on the hot skillet and cook until both sides are golden, then transfer it to a plate. Repeat until all the tortillas are cooked.
- In a medium bowl, combine the eggs, salt, and heavy whipping cream. Whisk until fluffy.
- Using the same pan on medium heat, add the butter and eggs. Stir the eggs with a spatula, gently creating ribbons and scrambling them.
- Now it's go time! Lay a tortilla flat, then add the scrambled eggs, cheese, and bacon in the center.
- Fold over two opposite sides to enclose the filling, then roll the tortilla up tightly into a burrito. Repeat the process. Store the burritos in airtight containers until you're ready to enjoy them.
